Coconut Milk One‑Pot Spaghetti Pasta (Serves 3-4)

In this recipe, herbs, tomatoes, pasta, coconut milk, garlic, sliced onion and everything else go into a single pot and simmer down into a rich, silky, lightly spiced sauce that tastes like heaven. Let’s show you how you can cook this fuss‑free recipe quickly.

Ingredients

  • 250 g spaghetti pasta 
  • 2 tbsp olive oil
  • 1 medium onion, thinly sliced
  • 5-6 garlic cloves, sliced or minced
  • 250-300 g cherry tomatoes, halved (or 1 cup chopped tomatoes)
  • 1 tbsp tomato paste or pizza pasta sauce (deepens flavour)​
  • 1 tsp oregano or mixed dried herbs
  • 1 tsp red chilli flakes (to taste)
  • 1 cup thick coconut milk (about 200 ml; use full‑fat for creaminess)
  • 2-3 cups water or vegetable stock 
  • 1-2 tsp salt (as per your taste)
  • ½ tsp black pepper
  • Small bunch of fresh coriander or basil, chopped for garnishing

Optional add‑ins (pick 1-2)

  • 1 small capsicum, sliced
  • A handful of mushrooms, sliced
  • A handful of spinach at the end
  • Fine chopped spring onion
  • 4-5 black olives

Let’s Begin!

  1. Slice onion, garlic, and prep tomatoes and any veggies you prefer (add-ins).
  2. In a wide, deep pan or pot, put everything together – add sliced onion, minced garlic, chopped tomatoes, pizza-pasta sauce or tomato paste.
  3. Now empty the whole cup of coconut milk along with 2-3 glasses of water.
  4. Stir it all together.
  5. Cook 1 minute, then add herbs, chilli flakes, salt, and pepper.
  6. Add spaghetti pasta, cover the pot and let it simmer on medium flame for 8-10 minutes.
  7. Remove the lid, stir well so pasta is mostly submerged and flavours are evenly distributed.
  8. Cover the pot again and let it cook for another 5 minutes. 
  9. Now Cook uncovered and stir every 1-2 minutes so nothing sticks to the bottom.
  10.  If the liquid seems to evaporate too fast and the pasta is still firm, add a splash of hot water (¼ cup at a time).
  11.  Once the sauce is thickened and the pasta is cooked, turn off the flame.
  12.  Stir in chopped coriander or basil for the final touch.
